Is there any way to edit the date of birth AND country?

If you are on a Wii U, yes, (you must be modded with Inkay.)
On the Wii U Menu, press your Mii/Icon and select “Change User Information”. Go ahead and change what you need to.

If you are on 3DS, then no, you cannot edit your information unfortunately.

Currently, there are only 2 ways to make it the non-default:

  1. Account creation directly on console - only time on a 3DS or on an unmodded Wii U
  2. Anytime on a modded Wii U
